Dave, I'm not sure if it's just up/down/left/right. I'm pretty sure that connecting the M pad to 0V will bring up some sort of menu and that the +and - buttons will change the values of items within the menu I don't see a shutter in front of the core, which means that you don't have to worry about c...

Dave,
there is a track coming from the M tab that looks like it goes to the header that the connector plugs into.
Maybe check with the multimeter to see if it does.

Whew that helps!!!
2 video outputs is not uncommon.
I'd just connect up the buttons, to find out what each on does.
The unused wires will probably be for some digital comms protocol like RS232
